Ingredients
- Kugel:
- 9 large Idaho potatoes, peeled and finely grated
- 3 Eggs
- 3/4 cup Oil
- 2 tsp Salt
- 1/4 tsp Pepper
- Pulled Brisket:
- 1 1/2 lbs Brisket
- 2 Tbsp Oil
- 2 Onions, diced

Step 1
Heat oil in a pot over a medium flame.
Add the onions and saute for 20 minutes, until golden.
Add the brisket to the pot.
Cover, reduce heat to low and simmer for 2 1/2 to 3 hours.
Remove from heat and drain all the liquid very well. Using 2 forks, pull the meat and mix with the onions.
Preheat oven to 450.
Line a baking sheet with parchment paper.
Combine grated potatoes with the remaining kugel ingredients and mix to combine. Pour onto prepared baking sheet and bake for 45 minutes.
Remove from oven and allow to cool enough to touch, then flip onto a second pan line with parchment paper.
Roll up with the parchment paper and allow to cool slightly.
When slightly cooled, unroll and spread the pulled brisket over the surface. Reroll without the parchment paper.
Return to oven and bake @ 450 for an additional 10 minutes.
