CHEESE*****Lemon Ricotta Spread

28/01/18 - I love this as a spread on baguette slices, be great in that format with a tossed salad, I'm sure. Tried it first on my bowtie pasta which was just meh.

Ingredients
- 1 tub (300 g) Bella Casara ricotta (Costco), drained
- 2 tablespoons whipping cream
- grated zest of 1 lemon
- salt and pepper to taste

Preparation
Step 1
Combine everything and refrigerate. (You could whip it if you want it to be super creamy)
Dollop over pasta or salads or spread on toasted baguette, etc. Drizzle with olive oil and top with chopped fresh herbs of choice, if desired, or toasted pine nuts, etc.
