Ingredients
- 2 15oz cans small red beans
- rinse and drained well
- 3/4 cup brown rice regular
- 1 medium onion finely chopped
- 1 stalk celery finely chopped
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 teaspoon ground cumin
- 6 cups low sodium vegetable broth
- 3-4 green onions chopped
- 1 medium tomato chopped and drained

Step 1
Mash one can of beans in the crock pot with a fork
combine remaining ingredients, except the green onions and tomatoes
and place in crock pot
cook on low 5 - 6 hours until rice is tender
sprinkle with green onions and chopped tomatoes
