For the rest of you, dear readers I’ve brought along a fabulous, silky, perfectly pipe-able, spreadable, delectable Chocolate Buttercream Frosting of wonder. I’ve been wanting to post a great chocolate frosting recipe for some time now, and this one is really wonderful. The flavor is rich, the texture is creamy and perfect. It will generously frost 24+ cupcakes, and should be enough to frost a round 2 layer cake. If you are looking to frost a 9×13 cake, this recipe will give you a bit more than enough.

Ingredients

  • 1 C butter, softened
  • 5 1/2 C powdered sugar
  • 1/2 C unsweetened cocoa powder
  • 6-7 Tb half and half
  • 1/4 tsp salt
  • 2 tsp vanilla

Step 1

1. Place the butter into your stand mixer or large mixing bowl. Beat with the paddle attachment for 30 seconds or so.

2. Add the powdered sugar and cocoa powder a bit at a time. If your cocoa powder is clumpy, you may want to sift it into the mixer to make sure it incorporates well.

3. Add the half and half, salt and vanilla and mix until nice and smooth (about 2 minutes). Add more half and half if it's too thick.

4. Frost, pipe or spread this heavenly frosting onto cupcakes, brownies, cake, cookies...etc.

Yield: about 3 Cups (enough to decorate 24 cupcakes with a tall peak of frosting)
