Provolone Panini with Prosciutto

Think of this as an Italian grilled cheese. With provolone, prosciutto, and arugula, you know it’s going to be good.

Ingredients
- 8 slices provolone cheese (4 oz.)
- 4 slices artisan white bread (1/2-inch thick)
- 1 ⁄4 cup slivered red onion
- Salt and black pepper to taste
- 1 ⁄2 cup arugula
- 4 slices prosciutto
- 4 tsp. olive oil

Preparation
Step 1
Arrange two slices provolone on each of two bread slices; top with onions, then season with salt and pepper.
Top onions with arugula, prosciutto, remaining four slices provolone, and bread slices. Brush both sides of panini with oil.
Heat a grill pan (or panini press) over medium. Grill panini until golden, 4–6 minutes per side (or 5 minutes in panini press).
