Cupid's Favorite Cookie Sandwiches

Ingredients

• 1 stick of butter, at room temp.
• 3/4 c granulated sugar
• 1 tbsp vanilla extract
• 2 eggs, at room temp.
• 1 tbsp cornstarch
• 2 cups white whole-wheat flour
• 1 tbsp powdered sugar
• 1/4 cup no-sugar-added raspberry or strawberry jam

Step 1

With an electric mixer on medium speed, beat butter and sugar 2 minutes or until fluffy. Beat in next 4 ingredients. Reduce speed to low; beat in flour until incorporated. Form dough into disk; wrap in plastic and chill at least 1 hour.

Roll out dough between 2 sheets of wax paper to 1/4" thickness. Chill 30 minutes. With 2" heart cutter, cut out 24 cookies, rerolling scraps. with 1/2" heart cutter, cut out centers of 12 cookies. Place on lined baking sheets.

Heat oven to 350 degrees F. Bake 10 minutes, Let cool. Using sieve, dust cutout cookies with powdered sugar. Spread flat side of uncut cookies with 1 tsp jam; sandwich wit the cutout cookies.
