Ingredients

  • 1/4 cup melted butter or margarine
  • 1 cup sugar
  • 1 cup persimmon pulp
  • 1 egg
  • 1/2 teaspoon cinnamon
  • 2 teaspoons vanilla
  • 1/2 cup milk
  • 1 cup self-rising flour
  • 1/2 cup coconut, chopped nuts and/or raisins (optional)
  • Nonstick cooking spray
  • Whipped cream or whipped topping

Preparation

Step 1

Melt butter, then add sugar and persimmon. Mix on low speed of mixer. Add egg, cinnamon and vanilla. Alternately add milk and flour, beating just until well-mixed. Stir in coconut, nuts or raisins.

Pour mixture into an 8-by-8-inch glass baking dish that has been coated with nonstick spray. Bake at 325 to 350 degrees for 45 minutes or until the pudding is golden brown on top and just begins to pull away from the sides.

Remove from oven and cool. Cut into squares and serve with whipped cream or whipped toppings.
