- 1 pound Jimmy Dean Sausage, browned and drained.
- 2 cups sharp cheddar cheese, shredded
- 4 eggs
- 4 1/2 tablespoons butter, melted and cooled
- 2 tablespoons sour cream
- 1/3 heaping cup coconut flour
- 1/3 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder

Step 1
Preheat oven to 375°F. Line large baking sheet with parchment paper or non-stick foil.
Melt butter and put in refrigerator to cool for 5 to 10 minutes.
Brown and drain sausage. Set aside.
In a medium to large bowl combine eggs, butter, and sour cream, salt and garlic and mix well. Add coconut flour and baking powder and stir until combined. Add sausage and cheese and stir well.
Roll or scoop balls about 1 inch and place on baking sheet. Should make about 35 balls. Bake for 14 to 18 minutes, until browned.
Eat immediately or store in refrigerator in a sealed container for up to a week.
