Fresh Apple Cake

Ingredients

• 2 cup sugar
• 1 1/2 cup oil (safflower)
• 2 teaspoon vanilla
• 2 well beaten eggs
• Juice of 1/2 lemon
• 1 teaspoon salt
• 3 cups flour
• 1 1/4 teaspoon soda
• 3 cup peeled and chopped fresh apples (winesap)
• 1 teaspoon cloves
• 1 teaspoon cinnamon
• 1 teaspoon nutmeg
• 1 teaspoon allspice
• 1 1/2 cup chopped pecans

Preparation

Step 1

Combine sugar, oil, vanilla, eggs, lemon juice and salt in mixing bowl. Beat well. Mix flour, soda and spices. Add to first mixture, beat well again. Add apple and nuts. Mix well. Bake in a greased and dusted tube pan for 1 1/2 hours at 325 degrees.

Dust top with confectioners sugar.
