Shrimp, Jicama & Mango Salad

Ingredients
- 3/4 C water
- 2 t salt
- 1 1/2 lbs large shrimp
- 1 small jicama, cut into 1/4" dice
- 1 mango, cut into 1/4" dice
- 1/2 C chopped cilantro
- 6 T Lemon juice
- 1/2 t Dijon mustard
- 1/4 t pepper
- 1/4 C olive oil

Preparation
Step 1
In large frying pan, bring water & 1/4 t. salt & bring to a boi. Add shrimp, cover & cook over mod hear 1 min. Stir & continue cooking until shrimp are cooked. Drain & cool. Cut each shrimp in half lengthwise
Put shrimp in large glass bowl & add jicama, mango & cilantro
In small bowl, whisk lemon juice, mustard and remaining salt & pepper. Add oil slowly. Just before serving, add vinaigrette to shrimp & toss.
