Ingredients
- 15 ounces boneless chuck, cut into 1-inch cubes
- 1 – 1/2 quarts water
- 1/2 cup each chopped carrot and celery
- 3/4 ounce uncooked green split peas
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup chopped mushrooms
- 1 cup whole green beans, cut into 3/4-inch pieces
- 3 ounces each pared all-purpose potato and sweet potato, cut into 1-inch cubes
- 1/4 teaspoon minced fresh garlic
- 1/2 cup frozen green lima beans

Step 1
Preheat broiler. On rack in broiling pan broil chuck turning once, until browned on all sides and meat is rare, about 3 minutes. In 3-quart saucepan combine chuck, water, carrot, celery, peas, salt, and pepper and bring to a boil. Skim scum from surface; reduce heat to low, cover, and let simmer 1 hour. Add remaining ingredient except limas and return to a boil. Reduce heat to low, cover, and let simmer, stirring occasionally for 1 hour longer. Stir in lima beans and cook until vegetables and meat are tender, 10 to 15 minutes.
