Ingredients

  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon double-acting baking powder
  • 1/8 teaspoon pepper
  • 12 ounces pared potatoes, coarsely grated
  • 1 egg, lightly beaten
  • 1 teaspoon grated onion
  • 1 tablespoon plus 1 teaspoon vegetable oil
  • Garnish: parsley sprigs

Onto sheet of wax paper or a paper plate sift together flour, salt, baking powder, and pepper; set aside. In medium bowl combine potatoes, egg, and onion; stir in flour mixture. Brush 9-inch nonstick skillet with 1 teaspoon oil and heat over high heat until hot but not smoking. Drop potato mixture by tablespoons full into skillet forming 4 equal pancakes (latkes); using the back of spoon, press top of each pancake to flatten slightly. Reduce heat to medium and cook until latkes are browned on bottom; turn lathes over and cook until browned on other side. Repeat procedure 3 more times using remaining oil and potato mi
