Miso Glazed Cod

Ingredients
- 1/3 C blonde or white miso
- 1/4 C dark brown sugar
- 1 tsp toasted sesame oil
- 2 Tbsp mirin (Japanese cooking wine)
- 6 6-oz black code fillets, or regular cod fillets
- Garnish: toasted sesame seeds, scallions

Preparation
Step 1
Rinse fish and pat dry.
Combine miso, brown sugar, sesame oil and miring and stir until brown sugar is fully dissolved.
Brush about 2 Tbsp of glaze on each fillet. Marinate for at least 30 min-1 hour.
Preheat broiler.
Place fish on foil-lined pain and broil 3-4 minutes or until top is slightly charred and glaze has caramelized.
Remove and brush remaining glaze on fish. Lower oven to 375 and cook additional 5-6 minutes until fish is flaky but not overcooked.
Top with toasted sesame seeds and chopped scallions and serve.
