FRIED*****Kimchi Fried Rice (Actifry)

21/01/18 - Great for both. I didn't try the egg yet. With an egg, this would make 6 servings but without, I ate more like 1 1/2 servings. It takes a bit of time to cook but if you prep everything earlier in the day, it's not too bad.

FRIED*****Kimchi Fried Rice (Actifry) 1 Picture

Ingredients

  • 5 slices (150 grams) bacon (Tarini's), cut into lardons
  • 1/2 tablespoon canola or peanut oil
  • 4 to 5 scallions, whites only, finely sliced on the diagonal
  • 1 - 2 shallots, thinly sliced
  • 1 - 2 cloves garlic, finely minced
  • 1 " fresh ginger, cut into small matchsticks
  • 1 packed cup kimchi, with juice, (12 ounces) drained and chopped, juice retained
  • 1/2 pound small cooked shrimp, thawed, or chicken or pork (cut into bite-sized pieces)
  • 1 to 2 tablespoons gochujang, to taste - didn't need with my current batch of kimchi
  • 1 cup Jasmine rice (to equal 3 to 4 cups cooked rice)
  • 1/2 tablespoon sesame oil
  • 2 teaspoons soy sauce
  • 3/4 cup frozen peas, thawed
  • 1 pinch salt, to taste
  • 5 teaspoons toasted sesame seeds, to garnish
  • 1/2 stalk green onion, thinly sliced, to garnish
  • roasted seasoned seaweed, shredded, to garnish, optional
  • 1 fried egg per person, to serve on top

Preparation

Step 1

Add the bacon to the actifry bowl and cook until crispy. Remove to a paper-towel lined plate, leaving the fat in the pan.

Add the scallions, shallots, garlic and ginger to the fat in the pan and cook for several minutes, until softened.

Next Add the oil if necessary and the kimchi (and gochujang, if using) and cook while stirring for 3 to 5 minutes until the kimchi starts to get soft. (Keep tasting until you achieve the proper level of heat with the gochujang, if using)

Add the rice and cook for 3 or 4 minutes to heat the rice and blend everything through. (Taste and add kimchi juice to adjust the heat and the seasoning, if necessary - it wasn't)

Add the peas and the cooked bacon and cook for a minute or two to heat through then add the shrimp, sesame oil and soy sauce and cook a minute or two longer, just to blend.

Plate and top each serving with a fried or poached egg, a sprinkle of sesame seeds and the green onion slivers and serve.
