Ingredients
- 1 medium banana(s)
- 1/3 cup(s)light unsweetened coconut milk
- 1/3 cup(s)uncooked old fashioned oats
- 1 Tbsp uncooked old fashioned oats
- 1/2 tsp vanilla extract
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 1 pinch table salt
- 1 medium peach,peeled and chopped in 1/2 inch cubes
- 1 tsp unpacked brown sugar
- 1 tsp reduced-calorie margarine, melted

Step 1
In a large bowl, mash banana with coconut milk. Stir in 1/3 cup of oats, vanilla, nutmeg, cinnamon, and salt; mix until well combined. Place the oat mixture in a glass jar and top with peaches. Refrigerate overnight.
Preheat oven to 350F. In a small bowl combine remaining 1 Tbsp of oats, melted margarine, and brown sugar and spread on a parchment-lined baking sheet. Bake for 5-7 minutes, or until crisp, stirring half way through.
Remove from oven and cool completely; store in an air-tight container at room temperature; to serve, top overnight oats with the crumble.
