Preparation

Step 1

1) Beat butter, confectioners' sugar and vanilla in large bowl with electric mixer until fluffy.
2) Gradually beat in flour until well blended.
3) Divide dough in half. Shape each into a ball and flatten to 1 inch thick rounds on 2 pieces of plastic wrap.
4) Wrap and refrigerate at least 4 hours or until firm. 5) Heat oven to 325 degrees. Lightly grease cookie sheets.
6) On a lightly floured surface with a floured rolling pin, roll half the dough at a time (keep remainder refrigerated) to 3/8 inch thickness. Cut with floured 1 1/2 inch heart or star-shaped cutter. Place 1 inch apart on ungreased cookie sheets.
7) Chill and reroll scraps. Sprinkle tops with granulated sugar.
8) Bake about 12 minutes until firm and set but not browned.
9) Remove from oven. If desired, immediately prick cookies randomly or around edges with a wooden pick.
10) Remove to a rack to cool completely.
