- 4 (5 oz ) fresh or thawed flounder fillets, about 3/4 inch thick
- 1/3 cup flour
- 2 tbsp vegetable oil
- 1 tbsp butter or margarine
- 1 tbsp lemon juice
- 1 tbsp chopped fresh parsley

Step 1
Rinse fish; pot dry with paper towels. In a shallow dish stir together flour and salt and pepper to taste. Coat fish with flour mixture. In a large skillet heat oil and butter. Add fish. Cook over medium-high heat for 7 to 8 minutes or until fish flakes with a fork (145 degree f) turning once. Transfer fish to warm platter. Pour pan juice over fish. Sprinkle with lemon juice and parsley.
