This is my favorite chicken and rice casserole. Simple to prepare yet delicious. I have pared it down for one serving.

Chicken and Rice Casserole for One 1 Picture

Ingredients

  • 1 chicken breast, cut-up
  • 1/2 teaspoons salt
  • 1 cups boiling water
  • 1/2 cups rice, uncooked
  • 1/3 canned cream of chicken soup
  • 1/3 canned cream of mushroom soup
  • 1/3 canned cream of celery soup

Preparation

Step 1

Grease casserole.

Place salted chicken in casserole.

Combine remaining ingredients and pour over chicken.

Cover with foil.

Cook in oven at 350° F for 1 hour.
