  • 1/3 cup pecans
  • 1/3 cup almonds
  • 1/3 cup walnuts
  • 1 cup Almond Flour
  • 3 tablespoons melted butter
  • 3 8 oz. packages cream cheese
  • 1/2 cup Splenda/Sugar blend
  • 3 eggs
  • 1 teaspoon vanilla
  • FOR THE TOPPING:
  • 2 cups sour cream
  • 2 tablespoons Splenda/Sugar blend
  • 1 teaspoon vanilla

Preparation

Step 1


1. Put nuts unto food processor and process till finely ground. Transfer to bowl and add almond flour. Melt butter and add to nuts, mixing well. Press onto sides and bottom of large springform pan. Refrigerate while preparing filling.

2. Have cheese and eggs at room temp. Mix cheese and sugar with eggs, mixing well. Beat egg whites until meringue consistency. Add to cheese mixture and pour into prepared crust. Bake for 25 minutes at 375F. Remove from oven and cool on rack for 15 minutes. Raise oven temp. to 475F. Meanwhile, prepare the topping. Pour onto cake and return to oven, baking for 10 more minutes. Let cool for 5-6 hours. Remove sides from pan and refrigerate till next day. Store, covered, till ready to serve.

3. May be served with Blueberry topping if desired.
