Ingredients
- 1 1/2 tsp olive oil
- 3/4 c finely chopped onion
- 1 lb 93% lean ground beef
- 1 lb 93 % lean ground turkey
- 1/2 c fine dried bread crumbs
- 1 lg egg
- 1 lg egg white
- 2 c beef stock
- 1/4 tsp plus 1/8 tsp kosher salt
- 1/8 tsp freshly ground black pepper-plus more for seasoning
- 2 tbsp all-purpose flour
- 2 tbsp tomato paste
- 1 tsp red wine vinegar
- 2 tsp Worcestershire sauce
- 1/2 tsp mustard powder
- 8 oz sliced white mushrooms
- 2 tbsp chopped fresh parsley, for garnish

Heat a lg, deep nonstick skillet over medium heat. Add the oil and onion and cook, stirring, until golden, about 5 minutes.
In a lg bowl, combine half of the cooked onion, the ground beef, ground turkey, bread crumbs, whole egg, egg white, 1/4 cup of the beef stock, 1/4 tsp of the salt, and the black pepper. Form into 8 oval patties that are about 3/4 inch thick.
In a bowl, whisk together the flour and remaining 1 3/4 cups beef stock. Stir in 1/4 c water, the remaining cooked onion, tomato paste, vinegar, Worcestershire sauce, and mustard powder.
Wipe down the skillet and heat over medium-high heat. working batches so you don't overcrowd the pan, cook the patties until browned. 2 to 3 minutes per side. Transfer to a plate.
Add the mushrooms to the skillet, season with the remaining 1/8 tsp salt and black pepper to taste, and cook, stirring until slightly browned, 2 to 3 minutes. Return the patties to the skillet and pour in the sauce. Reduce the heat to low, cover, and simmer, stirring occasionally, until the meat is tender. 25 minutes. Serve hot with parsley sprinkled on top.
