Ingredients

  • 3 Tbsp fruity olive oil
  • 1/2 # mushrooms, stems trimmed, brushed clean, whole if small, or cut 1/4" thick
  • 4 cloves garlic, peeled and thinly sliced
  • 2 tsp fresh lemon juice
  • 2 Tbsp dry Spanish sherry
  • 1/4 C chicken broth
  • 1/2 tsp sweet paprika, preferably Spanish smoked
  • 1/4 tsp crushed red pepper
  • kosher salt
  • Fresh ground pepper
  • 1 Tbsp minced parsley

Preparation

Step 1

Heat oil in a skillet until very hot and stir fry mushrooms and garlic over high heat for about 2 minutes. Lower heat and stir in all but parsley. Simmer a minute or two and sprinkle with parsley before serving.
