Ingredients
- 3 Tbsp fruity olive oil
- 1/2 # mushrooms, stems trimmed, brushed clean, whole if small, or cut 1/4" thick
- 4 cloves garlic, peeled and thinly sliced
- 2 tsp fresh lemon juice
- 2 Tbsp dry Spanish sherry
- 1/4 C chicken broth
- 1/2 tsp sweet paprika, preferably Spanish smoked
- 1/4 tsp crushed red pepper
- kosher salt
- Fresh ground pepper
- 1 Tbsp minced parsley

Step 1
Heat oil in a skillet until very hot and stir fry mushrooms and garlic over high heat for about 2 minutes. Lower heat and stir in all but parsley. Simmer a minute or two and sprinkle with parsley before serving.
