Ingredients

  • 2 10 oz packages frozen green peas
  • 3 Tbs butter
  • 1 russet potato, scrubbed unpeeled
  • 1 onion, chopped
  • 1 bunch watercress
  • 2 14 oz. cans chicken broth
  • pinch basil
  • 1/4 cup cream

Preparation

Step 1

1. Melt butter in large saucepan. Saute onion till transparent (5 mins). Add potato slices, watercress and basil. Pour broth over all and bring to boil. Cook covered till tender. (10 mins). Add all but 1 cup frozen peas. Cook another 10 mins. Blend in food processor or blender till smooth. Season to taste. Chill thoroughly and add cream. Garnish with frozen peas and sour cream. . Can also substitute broccoli, cauliflower, spinach, asparagus or artichoke hearts.
