Ingredients
- 1 1/2 cup black beans
- 4 cup water
- 4 slices bacon, diced
- 3/4 cup celery, diced
- 1 onion, chopped
- 1/3 cup carrot, diced
- 6 cup beef broth
- 1 ham hock
- 1/2 cup red wine
- 1/2 cup tomato puree
- 1/2 tsp oregano
- 10 peppercorns
- 3 garlic
- 1 bay leaf
- 1/2 cup rice

Preparation
Step 1
1. Place beans in a large saucepan with 3 cups of water. Bring to a boil. Boil 2 mins. Remove from heat and allow to stand 1 hour. Drain and set aside. In a large soup pot, cook bacon until crisp. Add celery, onion and carrot.saute 8-10 Mins. Add beans, beef broth, ham hock, wine, tomato puree and oregano to soup kettle. Make a bouquet garni using the peppercorns, garlic, cloves and bat leaf. Add to kettle. Bring to a boil. Reduce heat, cover and simmer 2 1/2 hours. Add 1 cup water and rice. Continue cooking 1/2 hour longer or until rice is cooked and beans are tender. Remove bouquet garni and discard. Remove Ham hock and cut meat from the bone; return meat to the soup. Makes 8 servings. 336 cals. per serving with 12mg. Fat per serving.
