Ingredients
- 1 tablespoon Oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 14.5 oz can stewed tomatoes
- 1 15 oz can Black Beans, undrained
- 1 10.5 oz can Condensed Beef Broth
- 1/2 cup chunky salsa
- 1/2 cup water
- 12 oz beef sausage
- 1/4 cup cilantro, chopped

Preparation
Step 1
1. In a large saucepan over medium heat, combine the oil onions and garlic. Saute for 8 minutes to until tender. Add the beans, tomatoes with liquid, broth, salsa and water. Bring to a boil over high heat.
2. Cut sausage into ½ inch slices and stir into soup. Reduce heat to low and simmer for 15 minutes. Ladle soup into bowls and sprinkle with cilantro.
Tips
My memory told me that a can of corn was included in the recipe when I went to the store to shop for this. It wasn't included but since I bought it, I added it anyway. It added a bit of crunch to the soup. I also cooked the cilantro with the soup, after I added about twice what was called for! Carol and the girls liked the soup served over white rice. I had some tortilla chips hanging around and I crushed them into the soup, like crackers. Those changes made it really good. I think I will make it like that when I make it again.
