  • 2 slices bacon, diced
  • 1/4 cup butter
  • 1 1/2 Tbs flour
  • 1 cup half and half
  • 1 lb spinach
  • 1 onion, chopped
  • 1/4 tsp salt
  • 1/8 tsp nutmeg

Preparation

Step 1

1. Saute bacon in med. saucepan till crisp. Reduce heat to med.-low and add butter. When melted, whisk in flour to make a roux. cook 2 mins, stirring constantly. Slowly add the half & half, whisking constantly till sauce is smooth and thick. Simmer about 10 mins, stirring frequently. Meanwhile, saute onion in a small amount of butter. Blend in onion and onions and spices with the sauce. Stir and heat thru.
