Ingredients
- 1 lb raw shrimp, medium, peeled and deveined
- 2 Tbs olive oil
- 2 Tbs lime juice
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cumin
- 1/8 tsp chili powder
- 2 onion, medium sliced
- 2 green bell peppers, sliced
- 3 Tbs cilantro, chopped, divided

Preparation
Step 1
1. Heat oven to low. In a large bowl, combine shrimp, 1 T. each oil and lime juice, 1/4 t. salt, 1/8 t. pepper, cumin and chili powder. Stir to coat shrimp. Let marinate while preparing veggies.
2. Slice onions and peppers. Heat oil and saute onions for 10 mins. Add peppers and saute another 5 mins. Stir in 2T cilantro. Remove to oven proof bowl and keep warm in oven.
3. In the same skillet, add a bit more oil and add shrimp and marinade. Quickly cook till done, about 5 mins. Combine with veggies. Can be served with sour cream in low carb tortillas, or over greens with taco dressing for a salad.
