Kate Hudson ~ There's a video at the link. You can use 2 packages of taco seasoning if preferred. I cut this recipe in half when I made it. I made these the greasy way, frying the other side of the tacos with the meat in it, folded over! I used about half as much oil as she did. Kate Hudson says in the video that she’s “a very health conscious person, but this is not the day!!” These are Teenage Boy Approved!

Ingredients

  • 2 TB chili powder
  • 1 TB ground cumin
  • 1 tsp paprika
  • 2 tsp salt, plus more to taste
  • 1 tsp onion powder
  • 2 tsp cornstarch
  • 1 tsp dried oregano
  • 1 tsp celery salt
  • 1/2 tsp cayenne pepper (omit or reduce if you’re not going for spicy)
  • 1/2 tsp red pepper flakes (omit or reduce if you’re not going for spicy)
  • 1/4 tsp ground black pepper, plus more to taste
  • 2 TB olive oil
  • 1 medium onion, finely chopped
  • 2 lbs ground beef chuck
  • 1/4 cup beef broth
  • Canola oil, for frying
  • 20 6-inch corn tortillas
  • Toppings for tacos

Preparation

Step 1

In a small bowl, combine the spices, including cornstarch. Heat the oil in a large frying pan over medium-high heat. Add the onion & beef, cooking until the onion is soft & meat is browned, about 4-6 minutes. Stir in the spice mixture & cook for 1 minute. Pour in the broth & continue cooking for 3 minutes. Transfer the meat to a bowl. Wipe the pan clean with a damp paper towel. Add ¼” oil to the pan & heat over medium-high heat until it’s shimmering, but not smoking. If it’s smoking, it’s too hot. For the easiest method, lay a tortilla in the oil & fry for 10 seconds. Flip & fry for another 10 seconds. Tortilla should be chewy, not crispy. Transfer the tortilla to a paper towel-lined plate & sprinkle with salt. Continue with the remaining tortillas, or go for a more advanced taco shell technique: Top the 2nd side with 2 TB meat down the middle. Using tongs, fold tortilla over for a few seconds to create a taco shell shape. Transfer to a paper towel-lined plate. Sprinkle with salt & repeat with remaining tortillas. Blot tortillas with a paper towel as these will be greasy!
