Ingredients

  • 3 large eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 4 cups peeled, chopped apples
  • 1 cup chopped pecans

Preparation

Step 1

Beat eggs at medium speed with an electric mixer until thick and pale. Gradually add sugar, beating until blended. Add oil and vanilla; beat at low speed until blended.

Combine flour and next 3 ingredients; add to beaten mixture, stirring until blended. Stir in apple and pecans. Pour batter into a greased and floured 10-inch tube pan. Bake at 350 degrees for 1 hour 25 minutes or until a wooden pick inserted in center comes out clean. Cool cake in pan on a wire rack 5 minutes. Remove from pan and cool completely on wire rack.
