Ingredients

  • 1/2 c mashed avocado
  • 4 pcs (2.75 oz each) ciabatta bread, sliced open
  • Kosher salt and freshly cracked black pepper
  • 2 c baby spinach
  • 8 oz thinly sliced turkey breast
  • 8 thin slices roasted red bell peppers, jarred (not oil-packed or homemade)
  • Olive oil spray or oil mister

Step 1

Preheat a panini press

Spread 2 tbsp of the avocado on the top of each piece of ciabatta bread. Season the avocado with a pinch of salt and black pepper. Place 1/2 c spinach on the bottom of each sandwich and top each with 2 oz of turkey and 2 slices roasted pepper. Close the sandwiches and lightly spray or mist olive oil on the tops.

Place the sandwiches one at a time on the hot panini press and close. Cook until the bread is toasted and crisp, about 5 minutes. Cut the sandwiches in half diagonally and serve immediately.
