Ingredients

  • 3/4 cup + 1/2 TBS butter, softened, divided
  • 1-1/2 cups + 2 TBS flour, divided
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1-1/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1/2 cup sweetened flake coconut

Preparation

Step 1

1. Grease loaf pan w/ 1/2 TBS butter. Coat pan w/ 2 TBS flour, shake out excess. Oven 325 degrees.
2. Sift together remaining 1 1/2 cups flour, baking powder and salt into mixing bowl; set aside.
3. With electric mixer on medium speed, beat remaining 3/4 cup butter until fluffy.
4. Gradually, in a thin stream, add sugar. Continue to beat butter and sugar together about 8 minutes more.
5. Add eggs, one at a time, beating well after each addition.
6. Lower speed to slow. Add flour mixture. Stir in vanilla and coconut flakes.
7. Pour batter into prepared pan. Bake one hour, then lower oven temp to 300 degrees and bake an another 30" or less, until toothpick inserted in center comes out clean. Remove from oven. Let stand in pan for 10". Loosen edges and unmold. Let cool completely, keep tightly covered at rooom temperature.
