Ingredients
- 2 small winter squash, like delicata, about 1 pound total
- 1/2 cup unsweetened coconut milk
- 4 teaspoons roasted red curry paste, more to taste
- 3 tablespoons chopped crystallized ginger, optional.

Preparation
Step 1
1. Preheat oven to 400 degrees. Scrub squash, cut in half lengthwise, remove seeds.
2. In a bowl, combine coconut milk with curry paste and ginger, if using. Place squash on baking sheet or in a shallow baking dish, cut side up. Spoon coconut mixture into squash cavities, coating edges. Bake for 40 to 50 minutes, until flesh is soft. Serve.
