White Fruit Cake

Ingredients
- 3/4 lb. butter
- 6 eggs
- 1 lb. sugar
- 1 box golden raisins (15 oz.)
- 2 lbs. red candied cherries
- 2 lbs. green candied cherries
- 1 lb. pecans
- 1/2 lb. walnuts
- 1 bag coconut (14 oz.)
- 2 lbs. flour
- 2 1/2 tsp. cream of tartar
- 1 tsp baking soda
- 1 cup apple juice (may need a bit more)
- 4 oz. candied pineapple
- 3 tsp. vanilla

Preparation
Step 1
Mix all of the dry ingredients with the flour making sure all the fruit is well coated with the flour. Add the cherries at the very end.
Melt the butter; allow to cool slightly. Beat the eggs and add vanilla and apple juice.
Combine and mix well. I use gloves and really get in there to mix things well!
Bake at 250 degrees.
Line pans with parchment paper and use a scale to ensure that all are of equal weight.
Mary has always used large bread pans - 3 pans will be in oven for almost 3 hours.
I used smaller bread pans --- 1.5 hours or so.
