Ingredients

  • 1 (8 oz.) package herb-seasoned stuffing mix {I use Pepperidge Farm}
  • 1/2 c. butter, melted
  • 1 c. chicken broth
  • 3 1/2 to 4 c. chopped cooked turkey*
  • 3/4 c. chopped onion
  • 1/2 c. chopped celery
  • 1/2 c. mayonnaise
  • 1/2 tsp. salt
  • 2 eggs, lightly beaten
  • 1 1/2 c. milk
  • 1 c. (4 oz.) shredded mild or medium cheddar cheese

Preparation

Step 1

Spray a 9x13” baking dish with non-stick cooking spray. Mix together stuffing, melted butter, and chicken broth. Place half of the stuffing mixture in the bottom of the prepared baking dish. Set aside remaining stuffing mixture.

Mix together chopped turkey, onion, celery, mayonnaise, and salt.

Spread turkey mixture evenly over stuffing mixture in the baking dish. Top with reserved stuffing mixture.

Beat eggs and milk together. Pour evenly over stuffing mixture in the baking dish.

Cover baking dish with foil and refrigerate for at least 4 hours or overnight.

Remove foil and bake at 350℉ for 45 minutes. Sprinkle top with shredded cheese and bake 10 – 15 minutes longer until cheese is melted.


*If you don't have leftover turkey, a 1 & 1/2 pound package of turkey tenderloins, cooked and chopped, works well for this recipe.
