Ingredients

  • 1 21 oz package brownie mix plus ingredients to prepare mixture
  • 1/2 cup chopped pecans
  • 1 cup prepared dark chocolate frosting
  • 1/2 cup pecan half
  • 12 caramels
  • 1 to 2 tablespoons whipping cream

Preparation

Step 1

heat oven 350*
line 54 mini muffin pans with paper baking cups
prepare brownie mix as directed on package
stir in chopped pecans
spoon batter into prepared muffin cups, fill 2/3 full
bake 18 minutes or until toothpick inserted come out clean
cool in pan on wire rack 5 minutes
remove cupcakes to racks cool completely
spread frosting over cooled cupcakes top with pecan half
combine caramels and 1 tablespoon cream in small saucepan
cook and stir over low heat until caramels are melted and mixture is smooth
add additional cream if necessary
spoon caramels decoratively over cupcakes
store at room temperature up to 24 hours
