Ingredients
- 6 oz. pancetta or bacon pieces (1 1/2 cups)
- 2 pounds Brussel sprout leaves
- 3 Tablespoons shallots, finely choppen
- 1 clove garlic, minced
- 1/4 cup craisins cranberries
- 2 Tablespoons balsamic vinegar
- 1/4 cup chicken stock
- Kosher salt and ground pepper

Preparation
Step 1
In a large pan or wok, heat a little olive oil and add pancetta. Cook until the fat renders, 2-3 minutes and the pancetta is crispy (bacon will take longer). Add the garlic, shallots, cranberries and separated brussels sprout leaves. Toss well; add balsamic vinegar and chicken stock and cook til sprouts have just wilted. Season to taste with salt and pepper.
Yields 4-6 servings (?)
