Ingredients
- 1 6 oz. can pineapple juice
- 1 Tbs lime juice
- 1 Tbs white vinegar
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/8 tsp pepper
- 1/4 tsp chili powder
- 8 drops yellow food coloring
- 1 Tbs oil
- 1 broiler-fryer chicken, cut up

Preparation
Step 1
1. Remove stem and seeds from chili and finely mince. In a small bowl, combine all ingredients except chicken. Measure out 1/4 cup marinade to use for basting during grilling. Place chicken in a shallow glass baking dish and cover with marinade. Cover and refrigerate overnight turning at least once. Remove chicken from the refrigerator 45 minutes before cooking. Drain chicken and grill over medium coals for 25-35 minutes or till no longer pink, turning and basting every 10 minutes.
