Ingredients
- 8 oz whole wheat baguette
- 1 clove garlic
- 1 cup canned plum tomatoes, drained really well and roughly chopped
- 1/2 tsp dried oregano
- pinch of red pepper flakes
- 1/4 cup grated parmesan cheese
- 1 tsp olive oil
- salt and pepper to taste

Preparation
Step 1
cup bread in half lenghtwise. Place in oven until boil to brown. Watch carefully!
Rub the toasted sides with the clove of the garlic. Divide the chopped tomatoes evenly oven toasted bread. Sprinkle evenly with oregano, red pepper flakes and cheese.. Top with a few drops of olive oil and season with salt and pepper.
Transfer bread to oven (350) and toast until the tomatoes are warmed through and the cheese is melted, about 5 minutes.
Slice each piece of bread into 4 pieces. Serve immediately.
