Ingredients

  • 3 cloves minced garlic
  • 1 pound fresh spinach
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 8 ounces cubed cream cheese
  • 4 ounces shredded mozzarella
  • 1 can diced artichoke hearts
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Step 1

You can substitute frozen spinach for the fresh; just squeeze out the extra moisture before adding to the Instant Pot.

Push saute on the Instant Pot and saute the spinach and garlic in the olive oil until the spinach is cooked down. Drain excess liquid.

Leave the garlic and spinach in the pot and add the broth, sour cream, mayonnaise, cream cheese, mozzarella, artichoke and onion powder. Stir to combine.

Place lid on pot and close the valve. Set the timer for 4 minutes on high (manual) pressure.

Once the 4 minutes is done, do a quick release and pour dip into a bowl to serve immediately. (My pot did not pressurize the first time I made this, so there was no pressure release, but it was still hot through and delicious. The second time I made it, I used the pot-in-pot method so there could be enough water to pressure.)
