Ingredients
- 1/2 cup dried apricots
- 2 TBSP brown sugar
- 2 TBSP water
- 1 tsp balsamic vinegar
- 1/2 - 1 tsp minced fresh rosemary or 1/4 tsp dried rosemary
- 1 8oz round Brie Cheese

Preparation
Step 1
Preheat oven to 400 degrees.
In a small saucepan, combine the apricots, brown sugar, water, vinegar, and salt. Bring to boil. Reduce heat to medium, cook and stir until slightly thickened. Remove from heat and stir in rosemary.
Remove rind from top of brie cheese. place in an ungreased ovenproof dish. Spread apricot mixture on top of cheese. Bake uncovered until cheese is softened. Serve with crackers.
