Potato Dessert Pudding

Ingredients

• 1 # potatoes (mashed, still hot)
• 2 oz. butter
• 2/3 c light cream
• Pinch salt
• 1 Tbs Flour
• 3 eggs (separated)
• 3 Tbs sugar
• 1 tsp. cinnamon
• 1 tsp. nutmeg
• 2/3 c raisins (soaked)
• 3 Tbs pine nuts

Preparation

Step 1

Whip together potatoes and butter, add cream, salt and flour.
Stir in egg yolks, sugar, cinnamon, nutmeg, raisins and pine nuts
Whip egg whites and fold into mixture
Pour into a greased and floured 8” pan, bake 4250 for 25 minutes
