Ingredients
- WASABI MAYONNAISE:
- FOR THE SPICE PASTE
- 2 serrano chiles, seeded and chopped
- 2 cloves garlic, minced
- 2 green onions including tops
- 1 tsp fresh ginger root
- 1 Roma tomato, chopped
- 2 teaspoons olive oil
- 1/2 cup mayonnaise
- 2 tablespoons plain yogurt
- 1 tsp wasabi
- 2 teaspoons lime juice
- 1 tablespoon cilantro, chopped
- FOR THE SATAY:
- 1 pound ground chicken
- 1/2 cup unsweetened coconut
- 2 tablespoons cilantro, chopped
- 1 egg
- 2 teaspoons brown sugar substitute
- 1 teaspoon lime zest
- 1 teaspoon soy sauce
- 1 teaspoon salt
- 1 tsp pepper
- Servings: 4
- Tips
- Also the original called for the meat to be shaped around skewers. I did this the first and came to the conclusion it was done for presentation for the contest. Too much work for me. The little loaves work just fine!

Preparation
Step 1
1. Spice Paste:
2. In food processor combine all ingredients but oil. Process till coarsely ground. In medium skillet, add oil and heat. Add chili mixture and cook 2 mins. Set aside and cool.
3. Wasabi Mayo:
4. In a small bowl combine ingredients and set aside to chill.
5. Satay:
6. In the food processor combine Satay ingredients with spice paste and process till combines. With wet hands form 8 small individual loaves. On a foil lined broiler pan sprayed with Pam, broil about 12 mins, turning once during cooking. Serve hot with Wasabi Mayonnaise for dipping.
7. Original recipe called for 2 teas. wasabi. I thought using only 1 made it just fine. Add more if you like hot!
