Ingredients
- 2 lb spinach
- 1 tsp seasoned salt
- 1 small sweet red onion
- 4 slices bacon
- 1/4 cup vinegar
- 1 tsp sugar
- 1 egg, hard boiled

Preparation
Step 1
1. Wash spinach, drain thoroughly and shred coarsely. Place in bowl and sprinkle with seasoned salt. Let stand 30 mins. Slice onion and separate into rings. Combine half the onion with the spinach. Fry bacon till crisp. Remove from skillet and crumble coarsely. Heat bacon fat and stir in vinegar and sugar. Pour hot sauce over the spinach. Toss until spinach is evenly coated. Sprinkle with bacon and garnish with remaining onion rings and hard cooked eggs. Makes 6 servings.
