Ingredients

  • 2 1/2 cups apples, peeled, cored, and chopped
  • 1 cup coconut milk*
  • 3 tablespoons coconut oil
  • 2 teaspoons cinnamon
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon allspice
  • 1/8 teaspoon nutmeg
  • Toasted coconut flakes (optional)
  • Use the coconut milk that comes in a can. The only ingredient listed should be coconut.

Preparation

Step 1

Melt the coconut oil in a large skillet over medium-high heat. Fry the apples in the coconut oil until soft. Add the cinnamon, ground cloves, allspice, and nutmeg to the fried apples and fry the apples for another minute. Pour the coconut milk and vanilla into the skillet . Allow the flavors to simmer together for another 5 minutes on low heat.

Transfer the apple mixture to a blender and puree until smooth. Pour the apple pudding into a large glass bowl and refrigerate for a least 2 hours. If your apple pudding was still very hot, it might take longer to set.

Divide among four bowls and top with toasted coconut flakes.
