Ingredients

  • 1 medium uncooked yukon gold potato, chopped
  • 1/2 cup celery, chopped
  • 1/4 cup onion, chopped
  • 4 pieces corn on the cob, kernels removed
  • 1 cup sweet red peppers, diced
  • 4 oz bacon, uncooked and diced
  • 2 cups skim milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp hot pepper sauce

Preparation

Step 1

Coat a large saucepan with spray, Oven medium high heat, cook bacon until cooked. Add potato, celery, onion, corn, and red pepper and saute about 5 minutes, until potato is tender. Reduce heat to low then stir milk into saucepan and season with salt and pepper. Stir in hot sauce. Cover and simmer 10 minutes. DO NOT BOIL!!!

You can use 2 cups of frozen corn and 1 cup of frozen bell pepper instead of fresh.

Yields about 1 1/2 cup per serving.
