Western Potato Omelet

Ingredients
- 2 medium potatoes
- olive oil spray
- 2 large eggs
- 3 egg whites
- 2 tbsp milk
- 2 slices ham chopped
- 2 tbsp onion chopped
- 1/2 cup bell pepper chopped
- 4 tbsp cheddar cheese
- salt and pepper

Step 1
Pierce potatoes and bake in mircowave. Cool when done. Scoop out potato leaving about 1/4 inch.In a large bowl whisk eggs,milk salt and pepper . Add onions pepper and ham and mix well. Spray a non-stick skillet with olive oil spray and cook egg mixture, stirring often. Fill potato skin with eggs and top with 1tbsp cheese. Place Heat oven to 450 degrees. Place filled skins on baking sheet and bake 5-10 minutes until cheese is melted.
