Ingredients
- Hot Honey Glaze:
- 3 lbs chicken wings (drumettes and flats)
- 2 cups (8 1/2 oz) all purpose flour
- 4 tsp garlic powder
- 2 tsp kosher salt
- 2 tsp black pepper
- 1 1/2 tsp paprika
- 1 cup whole buttermilk
- 2 large eggs, lightly beaten
- vegetable oil
- for frying
- 3/4 cup unsalted butter
- 2 cups granulated sugar
- 1 cup hot sauce of choice
- 1/4 cup honey
- 3 tbsp soy sauce
- 1 tsp lemon juice

rinse chicken wings under cold running water and pat dry thoroughly. set aside
in a medium bowl, whisk togetherflour, garlic powder, salt, pepper and paprika. in a separate medium bowl, whisk together buttermilk and eggs. dip chicken wings into buttermilk mixture, then place in flour mixture and toss to coat. remove from flour mixture, shaking any excess, and place on a baking sheet. refrigerate uncovered for 15 to 20 mins.
pour enough oil into a large heavy dutch oven to fill it halfway. heat over medium-high until thermometer registers 350 or a pinch of flour dropped into oil immediately sizzles and fries hard. add chicken wings to hot oil in batches, and fry until golden brown and juices run clear when pricked with a fork, turning occasionally (about 10 mins per batch)
while chicken wings are frying, prepare honey glaze: melt butter in medium saucepan over medium heat. add sugar, hot sauce, honey, soy sauce and lemon juice, cook stirring frequently, until sugar dissolves and mixture begins to thicken (about 5mins).
Transfer chicken wings from hot oil to a large bowl; drizzle with hot honey glaze and toss to coat. Serve immediately
