ROAST****Prime Rib Pot Pie

Ingredients
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 1 leek, thinly sliced
- 2 medium carrots, diced
- 1 medium parsnip, diced
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 4 tablespoons unsalted butter
- 8 ounces cremini mushrooms, quartered
- 3.5 oz/100 grams Shiitake mushrooms, sliced (1 pkg.)
- 2 tablespoons tomato paste
- 3 tablespoons flour
- 1/2 cup marsala
- 1 can consome, no water
- 2 or three sprigs fresh thyme, leaves stripped
- 1 1/2 - 2 cups leftover beef gravy
- 1 1/2 - 2 lbs. leftover prime rib, cut into 1/2" dice (I had 1.9 lbs.)
- 1/4 cup chopped fresh parsley
- salt pepper as needed
- TOPPING OF CHOICE - cornmeal topping, cheddar biscuit topping, gruyere biscuit topping, cobbler topping (from chicken and broccoli cobbler recipe), pastry, puff pastry, mashed potatoes

Preparation
Step 1
Dice prime rib, discarding fat and gristle, and set aside in a large bowl.
Heat olive oil and saute onion, leek, carrots, celery and parsnip until golden and tender, adding garlic for last few minutes. (Remember this is all the cooking the carrots and parsnips will get, except for when serving)
Remove to the bowl with the beef.
Melt half the butter in the pot and saute the mushrooms with the thyme until golden and they release their liquid.
Add the remaining butter and the flour. Cook the roux for a minute or so then add the tomato paste.
Add the consome, half at a time, along with the wine, and cook until smooth and thickened.
Add the leftover gravy and cook for a few minutes to thicken and cook out any flour taste.
Add to the bowl with the meat and vegetables and the chopped fresh parsley and divide into 6 x 1 1/2 cup portions and freeze.
Top individual servings with topping of choice and cook in the Breville oven at 400 for 18 - 25 minutes, taking care not to burn the topping.
