Ingredients

  • Bread:
  • 1/2 cup sugar
  • 6 tbsp instant potato flakes
  • 2 cups warm water
  • 1 pkg active dry yeast
  • 1/2 cup sugar
  • 1 tbsp salt
  • 6 cups bread flour
  • 1 cup starter
  • 1 1/2 cups warm water
  • 1/4 cup vegetable oil (for rising bowl)
  • To feed starter:
  • 1/4 cup sugar
  • 3 tbsp instant potato flakes
  • 1 cup water

Step 1

1. To make starter, mix sugar, potato flakes, warm water and yeast. Leave at room temperature for at least 8 hours uncovered. It will bubble. If you want to make bread now, take out one cup of starter and out the rest in the refrigerator. The starter must be fed every 3-5 days.

2. To make bread, mix sugar, salt, bread flour, starter and warm water to make stiff dough. Put oil in another bowl, put dough in bowl, and turn so oil is on all sides. cover with plastic wrap and let stand overnight.

3. Next morning, punch dough down, knead a little. Divide into parts and knead each part on a floured surface a few times. then put into greased loaf pans or shape into rolls and brush with oil. Let rise until doubled in size.

4. Bake in a preheated 350F oven for 30-35 mins. When done, remove from oven, brush with soft butter and serve.
