  • Salad Dressing:
  • 1/4 onion, grated
  • 1/2 cup sugar
  • 1/2 cup oil
  • 1/3 cup apple cider vinegar
  • 1 tsp dry mustard
  • 1 1/2 teaspoons poppy seeds
  • Carmelized Almonds:
  • 1/2 cup slivered almonds
  • 1/4 cup sugar
  • For the Salad:
  • 1 head Romaine
  • 1 pint sliced strawberries
  • 4.5 oz Round of Brie Cheese NOT double cream (3/4 of a round)

Preparation

Step 1

For the dressing:

1. Combine all ingredients and chill till serving

For the nuts:

1. Combine sugar and almonds. Stir constantly over medium heat till sugar melts and browns. Spread on foil to cool.

For the salad:

1. Use about 3/4 of a round of Brie. Cut into thin slices and slice in half, then cube. Take a small amount of the dressing and put into a bowl. Add the cheese as you slice, stirring to coat. This will keep the pieces separate.

2. Combine lettuce, cheese and berries in a serving bowl. Add dressing and toss to coat. Add almonds.

3. DO NOT use double cream Brie for this recipe.
